Cashew Juice or in Konkani people also calls it Niro. Cashew Juice is very famous in Goa and its sale is rarely found. Cashew Juice can only have in the months of April to May. Cashew Juice is very sweet and tasty. Cashew Juice extracted first is used for making Feni. The final Cashew juice which looks like water is Niro, which once if you had, you will need it again. Now lets see how it is made and how we get the final result that is Niro.
First Cashew fruit is plucked from the Cashew Tree or the fruit which is fallen on the ground, than all these fruits is collected and put in basket.
and then it is emptied on a place called “Kalam” in Konkani. Its a place where Cashew fruit and its Nut are separated.
Then after separation its ready to crush. Then it is crushed to extract Cashew juice and then which is collected. The first juice is very hard and which is not meant for drinking. Its used to prepare Feni.
This all cashew juice is collected in a vessel to use it later.
After extracting all Cashew Juice, “Ros” we call it in Konkani, then all crushed cashew fruits arranged and gathered it in a place like a photo below, and then its Final Cashew Juice is taken which is ready to drink and called as “niro”.
A rope is tied along with the crushed cashew fruit dump like the picture above and all the surface around the dump is cleaned with water so to get clean and pure Final Cashew Juice so called Niro.
A stone is placed above the heap of crushed cashew fruits so to extract clean and pure final cashew juice. just like below image.
The Final Cashew Juice / Niro is ready to drink, It looks like this filled in this bottle. I know you may be feeling like drinking it. 🙂

I love to take and drink niro.
The process looks disgusting. I would never put that in my mouth. There has to be a better way to extract the juice.
I must say, I tasted the fruit before, and it tastes delicious.
